I bought a 3-cup Chemex and tried it for the first time today. My main brew method is a French press.
I used the same amount of beans in the Chemex, that I do in the press. The only difference is I set the grinder to a less coarse grind.
I don't think it's any better than the press, but different. Pretty much everything that I've read about them spot-on. It does result in a cleaner cup of coffee that's not bitter at all, and it has a much thinner mouthfeel, than the press.
I'll have to try a few more cups, to decide which method I prefer.
Finishing off the last cup of home roasted Nicaragua Acopio Suyatal. did a city roast on this batch, ended up with a generic nutty aroma, some citrus and berry notes up front. Probably should have gone a bit darker.
Overall not too bad for my first attempt.

This is a very complex cup with a fruity aroma, strawberry and fig notes up front with some cherry and rootbeer on the back side, there’s more here but I’m not sure what it is.
I like this one, and of course it looks like I won’t be able to get any more of it.
